Heibeck’s in Wilton: American Roadside Fare Since 1931

This cute date (BYO), family fun and good vibe spot is something special to CT that you can’t miss.

Heibeck’s in Wilton opened in 1931 and has been family run for four generations. Back then, George Heibeck and Katherine Dhly Heibeck stayed up all night to hand churn over 100 of their original ice cream flavors to perfection, and then served the creamy goodness to their loyal customers daily. Though their ice cream is no longer produced on premises, the family prides itself upon the use of local food sources.

On my family’s visit, we ordered their “classics:” The Heibeck original burger, lobster roll, and classic dog. Cooked to perfection, the juicy simplicity of these basics washed down with sweet, fresh lemonade made us reminiscent of easy summer afternoons. The spicy crispy shrimp tacos brought an Asian fusion vibe that complemented the basics of American roadside fare, again, due to the wholesomeness of the ingredients. The loaded fries weren’t too overloaded. They were blended in perfect harmony with sour cream, bacon, and jalapeño.

The fourth generation owner was proud to discuss the ingredients and all of the sauces that are made from scratch. Because their business has grown so much and they can’t stay up all night anymore, they have researched the best ice cream flavors from family farms in Massachusetts and offer them on the menu. Heibecks's is also one of the first in the state to serve all natural soft serve ice cream.

In our era of Amazon and instant gratification, there is still hope for good, old-fashioned face-to-face service with a high quality product. Heibeck’s food stand in Wilton is the gastronomic gem that exemplifies just this.

*On a separate note, my brother has a severe nut allergy. When I ordered their famous banana split (it was truly Instagram-worthy), I originally forgot to ask them to clean their ice cream scoopers to rid any traces of nuts. They disposed the original one and prepared a fresh one with extra care so that my brother could enjoy the delicacy without worry. The staff went above and beyond with kindness and action in taking allergies seriously. You don’t see that everyday anymore.
